Look no further! Stuffed Dates with Nut Butter and Chocolate are the perfect snack to satisfy those hunger pangs and give you energy throughout the day!

Ingredients (Serves 4) :

  • 10 dates
  • 100 g dark chocolate (preferably at least 70% cocoa)
  • 2 teaspoons coconut oil
  • 2 teaspoons cocoa powder
  • 10 teaspoons of nut butter of your choice
  • Sea salt, cacao nibs, pistachio nuts

Instructions :

  • Cut the dates open and remove the pits.
  • Melt the chocolate with the coconut oil and cocoa powder in the microwave (600 W), stirring occasionally until fully melted.
  • Fill each date with the chosen nut butter using a small spoon. Close the dates to prevent the filling from spilling out.
  • Line a tray with parchment paper. Using a fork, dip each date into the melted chocolate, allowing excess chocolate to drip off. Place on the parchment paper and sprinkle with sea salt.
  • Repeat until all dates are filled and coated with chocolate.
  • Freeze for at least 1 hour. Store in a sealed container in the freezer.

Tips :

  • Top the dates with extra seeds like roasted sesame, crushed pistachios, cacao nibs, or coconut powder.
  • You can use different types of chocolate for this recipe.
  • If using tahini, note it is usually thinner than other nut butters. Use less and close the dates quickly to prevent spillage.
