Cod - Curry & Coconut

This recipe of cod, curry and coconut is not only tasty but also a nutritious choice that combines a balance of protein, healthy fatty acids, antioxidants and essential nutrients. This tasty and exotic dish is recommended for your health.
Ingredients :
- 350 g cod fillet
- curry paste
- ½ red onion
- 1 red bell pepper
- 2 cloves of garlic
- lemon juice
- 2 tablespoons soy sauce
- 200 ml coconut milk
- 300 g wild rice
- ½ bunch of parsley
- 1 cm of ginger
Instructions :
- Finely chop the ginger, garlic, onion and red bell pepper
- Melt coconut oil in a pan and fry the ginger, garlic, red pepper and onion until translucent.
- Add the curry paste and fry for a minute.
- Add the coconut milk and cook all this for 5 minutes.
- Cut the fish into coarse pieces and place in the sauce. Let the fish cook for 5 minutes (without boiling the sauce).
- Serve with wild rice and parsley.
