Buckwheat Pancakes

Ingredients :
- 1 egg
- 1 cup of milk
- 1 cup buckwheat flour
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ cup sparkling water
- a pinch of salt
- vanilla sugar (optional)
- coconut oil
- blueberries
Instructions :
- Mix all ingredients (except coconut oil and blueberries) together until smooth.
- Heat a frying pan on the stove and brush with some coconut oil.
- Bake the dough for 2-3 minutes or until small bubbles form on the pancakes. Flip it over and cook the other side as well until the pancakes are golden brown.
- Sprinkle the pancakes with blueberries and a topping of your choice. Enjoy!
Tip :
Buckwheat is not a grain and therefore does not contain gluten.
