How can I support the follicular phase by eating spring vegetables ?
A diet rich in vegetable proteins, fiber and antioxidants, such as those found in pea and courgette soup, is recommended to support the follicular phase of the female hormonal cycle. These foods support hormonal health and follicle maturation. The ingredients in this recipe promote good digestion and glycaemic balance.
Ingredients :
- 1 zucchini
- 1 red onion
- 1 tablespoon olive oil
- 2 cloves of garlic
- 1 handful of coriander
- 500 grams of peas
- 400 ml vegetable broth
- 200 ml coconut milk
Instructions :
- Finely chop the onion and garlic and stew in olive oil in a pot.
- Cut the zucchini into large pieces and add them together with some salt. Let everything simmer for 3 minutes.
- Add the peas and vegetable stock. Let this all cook for 25 minutes.
- When everything has cooked sufficiently, mix the soup.
- Add coconut milk and mix well. If necessary, dilute with a little water.
- Finish the soup with fresh coriander leaves.
